Brush the mushrooms with kitchen paper to remove any compost from the surface. Large flat mushrooms can be peeled, but will cook well with the skin in place too. 2. For closed cup and flat mushrooms, twist out the stalk, or using a small sharp knife to cut out the stalk. Large flat or field mushrooms 1. Cook on a griddle with a little oil and a sprinkling of garlic. Season with pepper and sizzle 5-6 minutes each side. Closed cup mushrooms 1. Remove stalks and tear the mushrooms into small pieces. 2. Marinate the mushrooms in ginger, oil, lemon.... to add extra depth to the dish. 3. Heat a pan, no oil add to the pan and sizzle the mushrooms for 5-6 minutes. Button mushrooms 1. Cook whole. Melt a little butter in a small non-stick saucepan. Season with black pepper. Add the mushrooms and cook over a high heat for 5-6 minutes.
